Nước Lèo (Spicy Peanut Sauce)
05 Sep 2014This is an absolute must-have when you make Spring/Summer rolls. The smell of the freshly grounded peanuts (I always roast and grind my own) is just so aromatic for you peanut lovers.
Ingredients
- 1⁄2 cup natural-style creamy peanut butter
- 2 medium garlic cloves, peeled and minced
- 1 tbsp soy bean paste
- 1 tbsp tomato paste
- 1⁄3 cup water
- 2 tsp granulated sugar
- 1 bird chile, trimmed and minced
- 1 tbsp lime juice
- 2 tsp soy sauce
- 1 tbsp tamarind (optional)
- 1⁄4 cup dry roasted peanuts (processed until coarse powder), recipe here
Yield: 2 cups
Instructions
- Add everything except water and ground peanuts into a mixing bowl.
- Gradually add water to make into a running paste.
- Finally, add the roasted peanuts.
- For an extra kick, add some crushed red pepper flakes.
