Sauces for Hainanese Chicken Rice

Chili Sauce

Ingredients

Instructions

  1. Pound chili (without seeds if less spicy desired), ginger, garlic in a mortar or chop in a blender until finely chopped.
  2. Add remaining ingredients and mix well.
  3. Mix in chicken stock to the desired consistency.

Black Sweet Soy Sauce

  1. Melt rock sugar in water over low heat.
  2. Add dark soy sauce and bring to a boil until sauce thickens to the desired consistency.
  3. Let cool completely before serving. (The sauce thickens more as it cools.)

Ginger Sauce

Instructions

  1. Fry 1 clove of sliced garlic in 15 ml of oil to make garlic infused oil.
  2. Pound ginger in a mortar or chop in blender until fine.
  3. Add salt and oil.
  4. Mix chicken stock to the desired consistency.
  5. Serve with Hainan Chicken Rice.
