Chili Sauce for Hainanese Chicken Rice (海南雞飯辣椒醬)

Chili Sauce
Ingredients
- 7 red chili (~80 g)
- 3 cm ginger (~40 g)
- 4 cloves garlic (~20 g)
- ratio 4:2:1 of chili:ginger:garlic
- 1 tbsp sesame oil (15 ml)
- 1 tsp honey
- 1⁄2 tsp salt
- 11⁄2 tbsp lime juice (1⁄2 lime)
- 1 tbsp white vinegar (15 ml)
- reserved chicken stock
Instructions
- Pound chili (without seeds if less spicy desired), ginger, garlic in a mortar or chop in a blender until finely chopped.
- Add remaining ingredients and mix well.
- Mix in chicken stock to the desired consistency.
Black Sweet Soy Sauce
Ingredients
- 1 tbsp honey
- 60 ml water
- 100 ml dark soy sauce
Instructions
- Melt rock sugar in water over low heat.
- Add dark soy sauce and bring to a boil until sauce thickens to the desired consistency.
- Let cool completely before serving. (The sauce thickens more as it cools.)
Ginger Sauce
Ingredients
- 6 cm long ginger
- 1 tsp salt
- 1 tbsp garlic infused oil
- reserved chicken stock
Instructions
- Fry 1 clove of sliced garlic in 15 ml of oil to make garlic infused oil.
- Pound ginger in a mortar or chop in blender until fine.
- Add salt and oil.
- Mix chicken stock to the desired consistency.
- Serve with Hainan Chicken Rice.
